really easy and yummy vegan eggnog

  This eggnog is so easy to make, you’ll be asking yourself why you’ve been buying store-bought for all these years.

Many eggnogs contain stabilizers and ‘extra’ ingredients to make them thick. This eggnog is creamy, naturally thick and delicious on it’s own or with your favourite spirit.

  • 1 cup raw cashews
  • 2 cups cashew milk beverage or canned coconut milk
  • 2 cups filtered water
  • 3 – 6 pitted dates, depending on how sweet you like your nog. I used 3 dates and it was the perfect sweetness for me.
  • 1 tsp ground flax seed
  • 1 tsp freshly grated nutmeg (use freshly grated, not powdered, it’s what gives this eggnog its flavour)

Soak your cashews overnight or if you’re in a bit of a hurry, pour boiling water over the cashews in a bowl and let sit for 30 minutes.

Using a sieve, rinse your cashews well.

Place the cashews, filtered water, dates, flax and nutmeg into a blender and whiz for a minute or two until all is well incorporated.

Store in a glass bottle.

Refrigerate.

Enjoy the next day with some rum or straight up garnished with some fresh nutmeg.

NB: Shake well before serving.
