NutriSue - pumpkin spice donuts

I made these donuts as a treat for Christmas. They have just the right amount of delicious spiciness and are great with a nice cup of tea.

Preheat oven to 375 degrees.

Grease a donut pan with coconut oil and set aside.

  • 1 tbsp ground flaxseed
  • 3 tbsp warm water
  • 1/2 cup non-dairy milk
  • 1/2 tsp white vinegar
  • 1 cup gluten-free, all-purpose flour blend
  • 1 ½ tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
    (This is the recipe I use for pumpkin spice –
    1/4 cup ground cinnamon
    2 tbsp ground ginger
    2 tsp ground nutmeg
    1 ttsp ground clove
    I like having a jar in my pantry because I make a wicked pumpkin spice smoothie)
  • 4 tbsp softened coconut oil
  • 1/2 cup brown sugar
  • 1 tsp vanilla

In a small bowl, mix the flaxseed and warm water together.
Set aside.

In another small bowl, mix the non-dairy milk and vinegar together. They will curdle.
Set aside.

In a medium-sized bowl, combine all your dry ingredients:
flour, baking powder, baking soda, salt, pumpkin pie spice and mix until everything is well combined.

In a large bowl, add your coconut oil and brown sugar and using an electric mixer or whisk, cream together.
Add the milk/vinegar combination and mix it until it’s smooth.
Pour in the flaxseed gel and mix again until smooth.
Add the vanilla and mix everything together until well combined.

Add the dry ingredients, a little at a time to the wet ingredients.

Mix and then add more dry ingredients until all the dry ingredients have been added.
Mix together with a large spoon until the batter is smooth and thick.
You can use a spoon to carefully fill the donut pan. I add my batter to a plastic zipper bag and fill the pan. The batter is quite thick, so I find that less messy. You could also use a piping bag.

Bake for 20 minutes.
Let the donuts cool in their pan while you prepare the glaze.

glaze
1/2 cup powdered sugar
1/2 tsp. pumpkin pie spice
1 tbsp. non-dairy milk
1/2 tsp. vanilla
Add all the ingredients to a small bowl and whisk together until thick and glossy.

When the donuts are cool, remove them from their pan and set on a rack.
Drizzle the glaze on each donut.

Makes 6 large donuts.

  1. Look so sweet… What is the different between baking soda and baking powder, can you substitude one for another? Happy new year by the way! Hope you have a good year! Mine started out great, I finally got this toy car to work! It was a science project. Any way, hope you feel youthful and happy for the rest of the year!

    • Hi Minh, so glad your 2015 is going well so far!
      Baking soda and baking powder are not interchangeable, so although you could substitute other leavening agents, you can’t exchange one for the other.
      Both baking soda and baking powder are leavening agents, which means they are added to baked goods before cooking to produce carbon dioxide and cause them to ‘rise’. Baking powder contains baking soda, but the two substances are used under different conditions.
