These tasty radish pickles are made in a jiffy and are delicious on sandwiches. Think avocado, tomato, cilantro, mixed greens tossed with olive oil and apple cider vinegar; topped with radish pickles. Yum!
super fast radish pickles
8 radishes thinly sliced on a mandolin or with a sharp knife
2 tbsp rice vinegar
1 tbsp apple cider vinegar
2 tbsp coconut sugar
Heat the vinegars with the sugar in a small saucepan over medium-low heat, stirring, just until the sugar dissolves.
Remove from the heat and add the radishes.
Transfer everything into a shallow sealable glass container and ensure that the radishes are covered with the sugar/vinegar mixture.
Chill for at least an hour.
Serve ’em up!
