This chocolate mousse is super easy to make and has only three ingredients; canned coconut milk, cocoa and maple syrup.
When I get the urge to make a quick dessert, this is a go-to. I always keep a can of coconut milk in the fridge so I’m pretty much ready to go when I need something quick.
coconut milk chocolate mousse
1 can full-fat coconut milk, refrigerated for at least 8 hours, or overnight
3 tbsp cocoa (do yourself a favour and buy Navita brand – it’s the best! It’s raw and a good source of antioxidants, fiber and magnesium)
1 – 2 tbsp maple syrup
After removing your can of coconut milk from the fridge, turn it upside down and remove the lid. You’ll see liquid on the top. Carefully drain the liquid and save it for smoothies. You’ll be left with solid coconut milk in the can.
Delicious with a sprinkle of cinnamon and fresh raspberries. Yum!
The mousse tastes like a rich, chocolate ice cream, so I kept some and put it in the freezer. I want to see what it tastes like frozen.
