I bought some peaches early in the season and they weren’t as sweet as I would have liked. So I pitted them and cut them into wedges, laid them all out on unbleached parchment paper and froze them. When they were frozen solid little nuggets, I transferred them to plastic zipper bags for future use. Well, today they came out of their bags. It was considerably hot and after a long bike ride to the beach and along the boardwalk, I was ready for some refreshment. With a few simple ingredients I had on hand, I whipped up a peach smoothie.
Problem is, now I want to use all the super sweet and juicy peaches I bought at the market last week to make more. I have to resist this temptation because they are perfect for eating. You know the kind you have to eat over the sink because they’re so juicy that the sweet nectar dribbles down your arms up to your elbows when you take a bite.
- 2 cups frozen peaches
- 2 cups non-dairy beverage of your choice (I used coconut milk beverage)
- 1 tsp maple syrup or coconut nectar (or to taste)
Place all the ingredients into a blender and blend until smooth.
