I have this for breakfast often; especially when there are beautiful seasonal fruits like blackberries and peaches available. But it’s also nice in the winter with frozen blueberries or chunks of apple or pear.
You can eat this warm or cold.
simple quinoa breakfast
cooked quinoa (I make a pot and keep it in the fridge to use throughout the week)
fruit (I especially love it with peaches, blackberries, pears, well, heck…all fruit!)
kefir, yogurt or coconut milk beverage
shredded coconut (optional)
optional: garnish with fresh mint or lemon thyme (nice with blueberries!)
- if you want to eat this warm, add a cup of quinoa to a pot with a bit of non-dairy beverage of your choice. I like to use coconut milk beverage. Add a tight fitting lid and let it heat on medium for a few minutes until the liquid has reduced and the quinoa is hot
- put the cooked or cold quinoa in a bowl
- add vegan kefir, yogurt or a bit of coconut milk
- add your fruit
- sprinkle on your hemp seeds, cinnamon and optional shredded coconut
